Einkorn Sourdough Waffles: Easy & Wholesome
Already have a sourdough starter? There’s no need to buy store-bought waffles when you make this wholesome, nutritious version at home. Crispy on the outside and fluffy on the inside, einkorn sourdough waffles is a breakfast recipe you’ll be coming back to again and again.

When I can’t long ferment sourdough, I always reach for einkorn flour to include in my recipes and baked goods. I love einkorn not only for its nutrient density, but because it’s more easily digested than modern processed wheat flour.
If eight of these Belgian waffles seems like too many, feel free to cut the recipe in half (using 2 eggs instead of 3). However, these waffles freeze and reheat beautifully, so making a big batch for leftovers might not be such a bad idea!

These waffles not only use einkorn flour as a key ingredient, but they also contain a healthy amount of sourdough starter. The fermentation process that a sourdough starter undergoes not only adds depth of flavor but aids in easy digestion.
The list of amazing benefits of sourdough is long, but the main thing to remember is that sourdough’s fermentation process breaks down gluten and phytic acid, making it easier to digest and increasing nutrient absorption.

These waffles are an excellent use of sourdough discard, but they can also be made if your starter is in active stage.

I developed this recipe for my larger family, since I have 4 growing boys and a hungry husband. My boys love to help making these waffles whenever we want to take things a step further from our usual einkorn sourdough pancakes. There’s just something something fun and magical about the family waffle maker.

Ingredients for Einkorn Sourdough Waffles
- Sourdough Starter: The fermentation process of sourdough starter not only enhances the taste but also promotes better digestion, making these waffles a nutritious breakfast option.
- Milk: Although I used organic coconut milk when shooting for this recipe, we typically use raw milk from our dairy cows. They’re dry right now though! Any milk will work for this recipe, including nut milks and milk substitutes.
- Eggs: Quality eggs contribute to the rich texture and taste of these homemade waffles.
- Coconut oil: The coconut oil should be melted but not so hot that it starts cooking the batter once you add it. A good oil is absolutely imperative in this recipe, as it’s responsible for that signature crispy waffle texture.
- Organic cane sugar: Any sugar will work for this recipe, but you can also leave it out if you wish. If you’d like to substitute for maple syrup or honey, I recommend decreasing the amount of milk a bit.
- Vanilla extract: I like to make my own vodka-based vanilla extract but of course, store-bought will work just as well.
- Einkorn flour: We’ve already covered the importance of this one!
- Salt: I use fine grain sea salt for best results.
- Baking soda: Incorporating this as an additional leavening agent is crucial for achieving the right fluffy texture.

Step-by-Step Recipe Guide
Plug in your waffle maker to preheat while you mix the batter.
Combine sourdough starter, milk, eggs, coconut oil, vanilla, and sugar with a whisk in a large mixing bowl. Add einkorn flour, salt, and baking soda, giving the dry ingredients a quick stir as they sit on top of the batter. Then, mix well using a whisk.

Grease the waffle iron by brushing with butter or spraying with cooking spray. Once the waffle iron is preheated, pour in about 2/3 cup of batter. Cook 3-4 minutes or until the iron’s ready light comes on.

Serve hot topped with butter and maple syrup!

If you wish to keep the waffles warm while rotating the batter through the waffle maker, place them on a baking sheet covered in foil and put them in the oven on the lowest temperature setting. In our house, we just start plating them up as they’re ready!
Tips for customizing and freezing sourdough waffles
If the idea of waffle add-ins is appealing to you, some of my favorites are wild blueberries or mini chocolate chips. I prefer to make sure my mix-ins are small, because larger ones tend to stick to the waffle maker more easily.
Another fun addition would be to add 2 tsp of cinnamon to the batter for a “cinnamon toast waffle” flavor. (iykyk)
Want to make a big batch for meal prep? These waffles freeze beautifully! Once completely cool, place the waffles in a single layer on a baking sheet and freeze until firm. Then, transfer to a freezer-safe bag or container for storage.
To reheat, simply pop the frozen waffles into a toaster or toaster oven until they are warmed through. They should maintain the same delightful texture and flavor.
