Einkorn Sourdough Waffles

Ingredients

  • 2 cups sourdough starter active or discard
  • 3/4 cup milk
  • 3 eggs
  • 1/2 cup coconut oil melted
  • 1/4 cup organic sugar
  • 1 tsp vanilla
  • 1 cup einkorn flour
  • 1 tsp salt
  • 1 tsp baking soda

Instructions

  • Plug in your waffle maker to preheat while you mix the batter.
  • Combine sourdough starter, milk, eggs, coconut oil, vanilla, and sugar with a whisk in a large mixing bowl.
  • Add einkorn flour, salt, and baking soda, giving the dry ingredients a quick stir as they sit on top of the batter. Mix well using a whisk.
  • Grease the waffle iron by brushing with butter or spraying with cooking spray. Once the waffle iron is preheated, pour in about 2/3 cup of batter.
  • Cook 3-4 minutes or until the ready light comes on.
  • Serve hot topped with butter and maple syrup!
