Einkorn Sourdough Waffles

- 2 cups sourdough starter active or discard
- 3/4 cup milk
- 3 eggs
- 1/2 cup coconut oil melted
- 1/4 cup organic sugar
- 1 tsp vanilla
- 1 cup einkorn flour
- 1 tsp salt
- 1 tsp baking soda
Plug in your waffle maker to preheat while you mix the batter.
Combine sourdough starter, milk, eggs, coconut oil, vanilla, and sugar with a whisk in a large mixing bowl.
Add einkorn flour, salt, and baking soda, giving the dry ingredients a quick stir as they sit on top of the batter. Mix well using a whisk.
Grease the waffle iron by brushing with butter or spraying with cooking spray. Once the waffle iron is preheated, pour in about 2/3 cup of batter.
Cook 3-4 minutes or until the ready light comes on.
Serve hot topped with butter and maple syrup!
