Einkorn Brownies

Ingredients

  • 1 cup butter
  • 1 cup organic brown sugar
  • 1/2 cup organic cane sugar
  • 1 tbsp vanilla
  • 3 eggs
  • 1 1/3 cups einkorn flour
  • 1 cup cacao powder
  • 1/2 tsp baking soda
  • 1 tsp sea salt
  • 1 cup mini chocolate chips

Instructions

  • Grease a 9x13 pan with butter or coconut oil. Preheat oven to 350F.
  • Beat together the melted butter and sugars thoroughly.
  • Add eggs and vanilla and mix very well. If your melted butter was very hot, you will want to let it cool a bit before adding the eggs.
  • Combine the einkorn flour, cacao powder, and sea salt in a smaller bowl.
  • Add dry ingredients to the wet ingredients. Mix just until you get a smooth batter.
  • Fold in the mini chocolate chips and spread the brownie batter into prepared pan, and bake for 20-25 minutes or until a toothpick comes out clean.
  • Let cool completely (if you can), and devour!
