DAY 1

  • Pour contents of package into glass jar (something around the size of a half pint works best starting out)
  • Add 2 tsp (or 10g) of water to the jar and let sit for 30 minutes to allow flakes to hydrate.
  • Stir until well combined.
  • Add 1.5 tbsp (or 15g) all purpose, bread, or whole wheat flour and 1 tbsp (or 15g) water and stir.
  • Cover with a loose fitting lid and keep on the counter.

DAY 2

About 24 hours later, or once your starter has some visible bubbles, feed 3 tbsp (or 30g) flour and 2 tbsp (or 30g) water, and stir. Cover with loose fitting lid and keep on the counter.

DAY 3

Another 24 hours later or so, move your starter to a slightly bigger jar if necessary. Feed a slightly rounded 1/3 cup (or 60g) and 1/4 cup (or 60g) water. Cover with a loose fitting lid and keep on the counter.

DAY 4

By this point, your starter should be doubling in volume and be active and bubbly, meaning it’s ready to use!
